A classic Thai stir-fry combining tender chicken, roasted cashews and fresh vegetables in a rich savoury sauce. Our Aharn Thai Premium Chilli Jam Sauce does all the hard work — you simply add fresh ingredients and finish the dish.
Ingredients
• 2–3 tablespoons Aharn Thai Premium Chilli Jam Sauce
• 250–300 g chicken breast, thinly sliced
• ½ cup roasted cashew nuts
• ½ cup red capsicum, sliced
• ½ cup onion, sliced
• ½ cup spring onion, cut into 3 cm pieces
Optional additions:
• baby corn
• mushrooms
• snow peas
Aromatics
• 1 clove garlic, finely chopped
• 1 small red chilli (optional)
To Serve
• Steamed jasmine rice
Method
1. Prepare the pan
Heat a wok or large frying pan over medium-high heat and add a small amount of oil.
2. Cook the chicken
Add the sliced chicken and stir-fry for 3–4 minutes until nearly cooked.
Add the garlic and chilli (if using) and stir briefly until fragrant.
3. Add vegetables
Add the onion and capsicum and stir-fry for 1–2 minutes until slightly softened but still vibrant.
4. Add the sauce
Add 2–3 tablespoons of Aharn Thai Premium Chilli Jam Sauce and toss everything together until the sauce coats the chicken and vegetables.
5. Finish the dish
Add the roasted cashew nuts and spring onion and stir through for 30 seconds.
6. Serve
Serve immediately with steamed jasmine rice.
