A rich, mild Thai curry with tender beef, warming spices and a beautifully balanced flavour.
Massaman curry is known for its creamy texture and gentle sweetness, and is unique among Thai curries for its use of dry spices such as star anise, cinnamon, clove and cardamom.
Often considered the closest Thai curry to a subcontinent-style curry, Massaman is a true comfort dish — slow cooked, deeply flavoured and incredibly satisfying.
With Aharn Thai Premium Massaman Curry, you can recreate this restaurant-style classic at home.
Ingredients
• 1 pouch Aharn Thai Premium Massaman Curry (450 ml)
• 300 g beef (chuck, blade or gravy beef), cut into 3 cm cubes
• 2 medium potatoes, peeled and cut into 3–4 cm chunks
• ½–1 brown onion, cut into wedges
Aromatics
• 1–2 bay leaves (optional)
To Serve
• Steamed jasmine rice
Chef’s Vegetable Notes
Massaman curry is traditionally cooked with potatoes and onions, creating a heartier and more substantial dish than other Thai curries.
The potatoes absorb the sauce as they cook, adding to the richness and depth of the dish.
Method

Prepare the beef
Place the beef into a saucepan and cover with water.
Bring to a gentle boil, then reduce to a simmer and cook for 45–60 minutes until the beef is starting to become tender.
Drain and set aside.

Heat the curry base
Defrost your Aharn Thai Premium Massaman Curry in the refrigerator overnight or microwave using the defrost setting (450 g).
Pour into a saucepan and bring to a gentle simmer over medium heat.

Cook the curry
Add the pre-cooked beef, potatoes and onion to the curry.
Simmer gently for 20–30 minutes until the potatoes are soft and the beef is tender.

Finish the curry
Add bay leaves (if using) and stir through.
Taste and adjust if desired.

Serve
Serve hot with steamed jasmine rice.
Chef’s Tips
• Chuck or blade are ideal cuts as they become tender with slow cooking
• Keep the simmer gentle — a rapid boil will toughen the beef
• Cut potatoes large so they hold their shape during cooking
• Add a small handful of roasted peanuts for a traditional finish
Make It Your Own
However remember — you are the chef in your own kitchen.
For a quicker version, cut the beef into smaller cubes or use thinly sliced tender cuts such as rump, sirloin or ribeye. This will reduce the cooking time significantly while still delivering a delicious result.
